Fresh Quinoa salad

 1 cup  Quinoa cooked with water.
{Using a fine sieve , rinse and drain the Quinoa. In a medium saucepan bring 11/2 cups of water to boil.
Add Quinoa , stir and reduce heat to medium-low. Cook for 12-15 minutes or until liquid is absorbed.
Cool and fluff with fork.}

In a large bowl you combine the cooked Quinoa and the following.
1 small red pepper diced.
3 greens onions sliced.
1 cup cucumber diced
11/2 cups grape tomatoes halved
1/4 cup chopped parsley.

Dressing:
3-4 Tbsp. olive oil
2 Tbsp. vinegar
1 garlic clove minced
salt and pepper to taste
A pinch of crushed red pepper flakes (optional)

Pour dressing over Quinoa and vegetable mixture and toss to coat evenly.ENJOY!!!
